We all love homemade cookies. We love to bake cookies - well, only in the winter when it isn't 102* outside! With the heat so high in the summers (granted, depending on where you live!) baking during the summer is usually out of the question.
But we still crave those wonderful home baked cookies! Well, here's a way to have your cookie and eat it to!
Take any drop cookie recipe and mix it up as you normally would. Then, fill a cookie sheet with the drops of cookie dough as you normally would. But now... drop them close together on the cookie sheet.
Next step... place the cookie sheet into your freezer. Allow the cookies to freeze. Once frozen, take them off the cookie sheet and fill a container or ziploc baggie with the frozen cookie mounds. Return them to your freezer for keeping.
NOW.... are you ready for some
homemade cookies? Just turn on your toaster oven to the temperature your recipe says. Line your toaster oven's baking tray with parchment paper. NOW... take out as many frozen cookie mounds as will fit on your tray - in my case I can get 8 mounds on my tray.
Next, do the "Easy Bake Oven" version - and just bake 6-8 cookies in your toaster oven! When they are done, cool and eat! How simple is that! No work, no mess, no heat, just fabulous cookies! Can't beat that with a stick!

10-12 minutes away!How'd I learn about this? My daughter bought a fund raiser thing and left 6 cookies for her daughter to bake with me. Now, I have been baking cookies since I was old enough to lick the mixer beaters! But as time has lapsed, I find, although I still love to bake, it is just me and if I bake 3 dozen cookies, I will eat 3 dozen cookies! Plus in the summer - I'm not thrilled with baking in the heat.
But it was one of those "light bulb" moments - oh good grief - why haven't I thought about that? - you know the feeling! It suddenly occured to me that "I can do that!". Just make and freeze, then bake as needed. How hard is that? I had done the freeze the whole ball of dough, but freeze the cookie mounds? Never occured to me! Okay, so it takes me a little longer to figure things out, but trust me.... once figured, life can be easier and with a fresh,
homemade cookie as the reward.. just don't get any
